What You’ll Need
• Water
• Cajun seasoning
• Seafood boil
• Crabs
• Corn
• Potatoes
• Mushrooms
• Sausage (optional)
• Lemons
• A stick of butter
Step 1: Build Your Base
Fill your pot and bring it to a boil.
Add your seasoning heavy up front. This is where your flavor starts.
Drop in your base ingredients:
• Potatoes
• Corn
• Mushrooms
• Sausage
Let those cook until the potatoes start getting soft. Then remove the veggies, placing them in a small ice chest to stay warm.
Step 2: Add Seafood Boil and Extras
Add your seafood boil and squeeze in your lemons. You can throw the lemons in the pot too. Add a stick of butter to round everything out.
Step 3: Add the Crabs
Make sure your crabs are cleaned.
Drop them into the pot and make sure the water covers them by a few inches.
Step 4: Boil
Bring everything back up to a boil and let the crabs cook at a rolling boil for about 6 minutes.
Step 5: Soak
Turn the heat off and let everything soak.
This is where the flavor really sets in.
Give it time. The longer they soak, the stronger the flavor. over cooking is a real thing, so make sure you turn off that pot. (adding a bag of ice to the pot will help but you want to make sure you boil for 8 minutes if you add a bag of ice)
Step 6: Check and Pull
Watch the crabs as they sink. When 95% of the crabs are sunken, you're ready to pull.
typically the longer the soak the better with crabs and crawfish as long as the pot isn't over 165 degrees F. (keep in mind water boils at 212 degrees F).
When they’re ready, pull them out and let them drain.
Don’t rush it. throw them in the ice chest and you're ready to eat in 10-15 minutes. Let the seasoning do its thing.
Final Thoughts
Boiling crabs isn’t about doing anything fancy. It’s about building a good base, seasoning it right, and letting everything soak like it should.
If it smells right and tastes right, you’re good.
